Chicken Gnocci Soup

It is one of the tastiest soups I've made in a while. Everyone here loved it and S even asked me to make it more often!
For Weight Watchers plus points, it comes out to 6 pts plus per serving. But, I did use 2 cups fat free half and half and 2 cups skim milk instead of 1 quart half & half. Couldn't tell the difference in taste and I loved the lower calories.

Black Bean Brownies

In my quest for healthier foods, I have been adding veggies to as many foods as I can. So, our spaghetti contains carrots (finely ground), mushrooms (also finely ground) and shredded zucchini. In fact, yesterday we had spaghetti squash instead of noodles. I love this, C likes it, S tolerates it and the Hubster eats it. That's a keeper in my book.
But, my favorite 'hidden' veggie so far? My black bean brownies. I use my favorite brownie mix, puree up a can of black beans and combine the two together (no eggs, no oils, just the brownie mix and black beans). Then I rinse the can and put it out in recycling before I get caught, er, I mean to show my commitment to the environment. Ahem....
Bake brownies as directed on the box.
The brownies taste good and are quite fudge-y. Is that a word? Well, it is now in my book. As is fudgalicious, fudgocity and fudge-0-mania. But I digress.
Sprinkle brownies with a dusting of powdered sugar. The kids LOVE these.
They've had a brownie in their lunch every day this week. And I love the idea that they're getting more vitamins and fiber along with the numminess.

Best Snack of 2011....So Far

As always, my children are ravenous when they open the door to come in after school. "What's for snack?" is asked at approximately 0.5 seconds after walking in the house.  I have come to dread this time 'cause I don't like having to come up with more food options. I already plan 3 meals every day, snacks just about push me over the edge.
I know, I know, I can list all the options out, the kids can pick, and get it themselves, they can always have fruit (but with C's lack of teeth, I still have to cut the hard stuff up for her), I can do a lot of things to make it easier. But, frankly, I just don't do that.
But, I have stumbled upon the best snack ever..well, so far this year anyway.
Get out your blender, chop up a frozen banana (you might need to add a bit of milk so it doesn't freeze up the blades, no I didn't measure the amount, just eyeball it, you know you want to anyway) and blend away. It comes out like banana ice cream and it's really, really creamy. I added a bit of chocolate syrup 'cause everything's better with chocolate on it.
Sooooooo tasty.
Next time I'm gonna try peanut butter. Oh, then maybe peanut butter and chocolate together!
Guess I need to plan more of these kind of snacks.
Oh, and the kids? They totally thought I had made ice cream. Score!!

Stuffed Zucchini

In an attempt to use up some of the yummy garden produce, I made Stuffed Zucchini. Hubster (from a website called Annie's Eats) and I loved it, the kids ate some but did not request any more. I think they just need more exposure to it!

Stuffed Zucchini Boats

1 zucchini, about 12 inches long (or 2 6-inch)
2 tbsp. olive oil, divided
½ cup onion, chopped
3 cloves garlic, minced
½ cup mushrooms, chopped
1 lb. turkey sausage or ground turkey
2 tbsp. dry white wine (I used sherry cooking wine)
2-3 tomatoes, seeded and diced
3 tbsp. chopped fresh basil
1 tsp. minced fresh rosemary
¾ cup grated Parmesan cheese
1 egg, lightly beaten
½ tsp. salt
½ tsp. pepper

Cut zucchini in half lengthwise. Scoop out insides, leaving a shell about ¼-inch thick. Reserve about half of the insides.
In a medium skillet over medium-high heat, heat 1 tablespoon of olive oil. Saute the onion and garlic until tender, about 4-5 minutes. Add the mushrooms and reserved zucchini insides to the skillet and saute another 2 minutes. Remove from the heat.
Heat the remaining tablespoon of the olive oil in a skillet over medium-high heat. Crumble in the sausage or ground turkey and cook until lightly browned on all sides, stirring occasionally. Stir in the cooked onion and mushroom mixture. Add the wine to the pan along with the tomatoes, basil and rosemary. Cook for 1 more minute. Drain of any excess fat, remove from heat and set aside to cool.
Preheat the oven to 375° F. Once the turkey mixture has cooled a bit, mix in the Parmesan, egg, salt and pepper. Fill the zucchini shells with the mixture. Fill a baking dish with ¼-inch of water. Place the filled zucchini shells in the pan and bake in the preheated oven for 40 minutes, until golden brown. Remove the zucchini from the pan and serve immediately.

Chopped Chicken Salad

There's nothing better than a hot summer day and a yummy cool salad for lunch.
Here's what I made yesterday, it was quite tasty. (This is a Hungry Girl recipe found while I browsing the net).
If you make the whole thing, it's a big salad (I'm still enjoying it for breakfast today after having it for lunch & dinner last night).  I highly recommend this dish!

Chopped Chicken Salad
1 package broccoli slaw
12 oz cooked and diced chicken breast
1 cup water chestnuts, drained and cut into strips
1 can mandarin oranges, drained & rinsed
1 cup scallions, chopped
3/4 cup Newman's Own Lighten Up Low Fat Sesamee Ginger Dressing

Toss together & refrigerate for 2 hours before serving.
5 servings/salad

Weight Watcher Points for Salad: 15
WW Points for serving: 3

Speedy Brownies

Oh my heavenly goodness! They were fantastic!! Definitely a keeper. I did reduce the oil to 3/4 cup and I think you could cut back on the eggs a bit if you'd like, but goodness, why would you??
This is my new go-to quick dessert.

A New New Year's Tradition

I started, what I hope to become, a New Year's tradition. I made cinnamon rolls. No, not the whack the container on the counter and peel them out of the can kind, but the homemade, yummy, gooey cinnamony goodness kind. Mmmmm, they were so tasty I forget to get a picture of them but they looked a lot like the one above only mine were less, well, uniform in size shall we say.
It really wasn't as difficult as I thought it would be because I mixed them in my bread machine, let them sit in the refrigerator overnight and then baked them fresh the next morning. I found that using dental floss to cut them worked the easiest. And, because I made them with half whole wheat flour I'm claiming them as health food.
Because I can.
That's why.
It's my blog and I'm feeling sassy that's why.

Perusing the Web

In my quest to find more and varied recipes online, I ran across this website: www.recipesofacheapskate.blogspot.com. There's some tasty ones on there, but I make no claims as to how healthy they are. I must say the author sure does like her cheese though.

In other food related news, I have found that I really pared down my cookbooks. Why? Because I found that I did a lot of searching online. My other favorite recipe blogs are these:

Chicken Enchilada Dip


I made the famous chicken enchilada dip for MOPS this morning and once again, it was a hit. I continually find it puzzling that something so easy inspires such devotedness. Anyway, here's the recipe for those who asked:
Chicken Enchilada Dip
INGREDIENTS
2 cups shredded cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup (4 ounces) shredded cheddar cheese
1 can (5 ounces) evaporated milk
1/2 cup chopped celery
1/3 cup finely chopped onion
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
Tortilla chips
DIRECTIONS
In a 2-qt. microwave-safe dish, combine the first eight ingredients. Microwave, uncovered, on high for 4-5 minutes; stir. Microwave, uncovered, 3-4 minutes longer or until heated through. Serve with tortilla chips. Yield: 3 cups.

Slow Cooker Italian Beef

Slow Cooker Italian Beef for Sandwiches

1 1/2 cups beef broth
1 cup water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt (I used onion powder)
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix (such as Good Seasons brand)
1 (5 pound) chuck roast
Combine water and beef broth with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix. Whisk to combine.Place roast in slow cooker, and pour salad dressing mixture over the meat. Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours.
When done, remove bay leaf, and shred meat with a fork (I did this step about 45 minutes before eating so the shredded meat had time to absorb more of the juices in the crockpot). Serve on crusty rolls with cheese, if desired. (Its' really tasty with some mozzarella cheese)

Cheddar Broccoli Soup


I am always looking for quick, good meals to make. This is one of the few cheesy soups that did not use Velveeta. Now, don't get me wrong, I like my fake cheese as well as anyone, but I am making a more conscious effort to use natural ingredients. The kids loved it too. Ate broccoli without complaining!

1 can chicken broth
1 small onion, diced
1/3 c. flour
1/4 c. butter
Pepper to taste
2 c. milk (I used skim with great results)
1 1/2 c. shredded cheddar cheese (the sharper the better for flavor
1/2 c. shredded swiss cheese
steamed chopped broccoli (the amount of broccoli really boils down to preference)

Simmer chicken broth and chopped onion for 15-20 minutes in a covered small saucepan, until onions are soft. Heat milk in the microwave for 1-2 minutes.

In a separate medium-sized stockpot, melt butter then add flour and pepper. Cook together for a couple of minutes, then whisk in warmed milk. Stir and heat together on medium-high heat until soup starts to thicken. Next add chicken broth and continue to stir until well blended. Add cheeses and steamed broccoli.

Serve immediately.

Extra tasty add-ins for this are potatoes and ham. Yummy.

Pumpkin Apple Spice Muffins


Have a new recipe to try. I'm thinking this will warm up the house before dinner. (Note: I made these last night and they are tasty, tasty, tasty! Will definitely be baking these again!)


Pumpkin Apple Spice Muffins from Melissa F.
Yield: 2 dozen
1 2/3 cups all purpose flour
1 cup sugar

1 tablespoon pumpkin pie spice**
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup canned pumpkin
1/2 cup butter or margarine, melted
2 large eggs, lightly beaten
1 Granny Smith apple, peeled and finely chopped
1 teaspoon pumpkin pie spice**
3 tablespoons sugar
Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine pumpkin, butter, and eggs in another bowl and add to dry ingredients, stirring just until moistened. Fold in chopped apple and spoon into greased muffin pans, filling two-thirds full. Combine 3 tablespoons sugar and 1 teaspoon pumpkin pie spice; sprinkle evenly over muffins. Bake at 350 degrees for 20 minutes. Remove from pans immediately, and cool on wire racks.
**My tip: if you don't have pumpkin pie spice, use the following combination: 1/2 teaspoon cinnamon, 1/4 teaspoon ginger and 1/8 teaspoon nutmeg and 1/8 teaspoon cloves. Mix together and woila! - you have the equivalent of 1 teaspoon pumpkin pie spice (and it is much cheaper than buying it premade).

Salisbury Steak

This is my kid's new favorite recipe. Simon even ate the mushrooms in this (of course I may have told him that they were big seasoning pieces)!

Salisbury Steak
1lb Lean Ground Beef
1/3 Cup Bread Crumbs or Cracker Crumbs
½ tsp Salt
¼ tsp Pepper
1 Egg
Small Onion Sliced
1 Can Condensed Beef Broth
1 – 4oz Can Sliced Mushrooms (Drained)
2 T. Cornstarch
2T Water
1 - Packet Brown Gravy Mix or 1 - Jar/Can Brown Gravy
Mix First 5 ingredients together and shape into ovals about ¾ inches thick. Cook patties in a skillet turning once until brown.
Add onion mushroom and beef broth heat to boiling. Reduce heat cover and simmer for 10 minutes. Remove patties to a casserole dish and keep warm.
Heat remaining mixture until boiling. Mix water and cornstarch together to make a paste.
Add to boiling mixture with a wire whisk and whisk until gravy begins to thicken.
Pour the gravy over the patties in the casserole dish and bake at 350 until bubbly. Serve with rice, mashed potatoes or noodles.

Toffee Crackers

1 c. light brown sugar
24 sq. unsalted saltines
1 c. butter (2 sticks)
1/2 tsp. vanilla
1 bag chocolate chips
Arrange saltines in a single layer on an aluminum foil covered 9x13 cookie sheet. Bring brown sugar and butter to a boil and boil for 3 minutes over medium heat, stirring once or twice. Remove sugar/butter mixture from heat; stir in vanilla and pour over crackers.

Bake in oven for 5 minutes. Keep a constant watch on it because ovens vary in temperature and it will burn very easily.
Allow cookie pan to cool for 5-10 minutes, or until it is set.
Distribute chocolate chips evenly over the top; spread with a knife when they have softened. Cool by covering with foil and put in the refrigerator.
To get it out of the cookie sheet, turn opposite corners like you would an ice cube tray and the whole sheet of toffee should pop out. Then you can cut, break, or tear off pieces as neatly or haphazardly as you like. Or, if you're impatient like I am, I just rip 'em apart, leaving them in whatever shape they naturally occur. Then either refrigerate until dessert, or freeze until the gala event.

Honey Roasted Chex Mix

Here's the recipe that was requested by a few of you. Thanks to Trisha for the original recipe!

3 cups Honey Nut Chex cereal
2 cups Cheerios cereal
1 1/2 cups Bugles original flavor snacks
1 cup pretzels or 1/2 cup honey-roasted peanuts
2 tablespoons light corn syrup
2 tablespoons honey
1 tablespoon margarine or butter*
1/2 teaspoon vanilla
Heat oven to 325 degrees F. Mix cereals, snacks and pretzels in large bowl; set aside.
Heat corn syrup, honey and margarine to boiling in 1-quart saucepan over medium heat, stirring occasionally. Remove from heat; stir in vanilla. Pour over cereal mixture in bowl, stirring until evenly coated.
Spread in ungreased 15 1/2-inch** baking pan with sides.Bake 20 minutes, stirring after 10 minutes. Spread on waxed paper or aluminum foil; cool completely. Break into bite-size pieces. Store in airtight container.

*Do not use spread or tub products.
**A rectangular pan, 13x9x2 inches, can be used instead. Bake 24 minutes, stirring after 12 minutes.
